Growing up, my mom made a similar version of this recipe whenever we had guests stay at our house. That was usually our cousins, so when I make this recipe I think of them 🙂 I like it more than quiche, and it cooks really quickly!
Breakfast, when I have the time to make it right, is my favorite meal. Having a good breakfast always makes the day a little bit happier, don’t you think? This recipe includes making pie crust, but it really doesn’t take long to make. And it’s sooo yummy!
The crisp crust pairs perfectly with the cheesy egg mixture. I used bacon, but you can be creative with your toppings. I’ve used a variety of things with this recipe, including spinach, breakfast sausage, green peppers and onions. So change it up depending on your mood!
- 3/4 cup shortening
- 1/2 tsp. salt
- 1 cup wheat flour
- 1 1/4 cups white flour
- 6-7 tablespoons cold water
- 7 eggs
- 1 cup greek yogurt or sour cream
- 1 cup cheddar cheese
- 1/2 tsp. parsley flakes
- 1/4 tsp. basil flakes
- 1/2 tsp. garlic powder
- 1/2 tsp. black pepper
- 6-7 pieces of turkey bacon or other toppings (breakfast sausage, chopped fresh spinach, onions, green peppers, etc.)
For the crust, gather your ingredients along with a mixing bowl, a spatula and a pastry blender (or a fork and knife).
Preheat the oven to 425°F. Combine the wheat flour, white flour and the salt in a mixing bowl.
Add in the shortening.
Lightly coat the shortening with the flour so that it won’t stick to your pastry blender (or fork).
Cut the shortening into the flour with a pastry blender, or a fork and a knife.
When the mixture looks like this, you are ready to add the water.
Add in one tbls. of cold water at a time, fluffing the mixture with a fork in between each tbls. of water.
Using clean hands, (free of rings!) form the mixture into a ball. If it’s too dry, add a bit more water before forming it.
Set pastry dough on a well floured surface and roll it out. Roll the dough out to about the size of your pizza pan.
Gently slide the dough onto the pan. You don’t need to oil or grease the pan.
Flute or pinch the edge, or press it with a fork to complete the edge.
Now it’s time for the filling! Heat up a skillet and cook the bacon, then chop it up into small pieces.
Gather the ingredients you will need, as well as a mixing bowl and a wire whisk.
Whisk the eggs together in the mixing bowl.
Then add the basil, parsley, garlic powder and ground pepper.
Add in the greek yogurt, and whisk until smooth and free of lumps.
Your mixture should look like this.
Pour mixture over crust.
Sprinkle with the cheese and any other toppings.
Place in the oven and cook for ten minutes. Decrease heat to 350°F and cook for another five, or until egg is full cooked.
Enjoy it hot and fresh from the oven!
