Cranberry Greek Yogurt Granola Bars

Hey friends! Hope you all are enjoying the beautiful spring weather-wherever you are! With summer coming on, I decided to do a bit of experimenting with recipes that I think are summery 🙂 So…(drumroll)… I present, Cranberry Greek Yogurt Granola Bars!  These bars are really delicious. I mean, they feel like they could be a yummy desert, but all the ingredients are healthy! And did I mention they are no-bake?


These bars are chock full of protein and healthy fats, and I think they would be a great pick me up as mid-day snack.


You can change up the ingredients to your own tastes, but the combo of things I used turned out fantastic! If I do say so myself 🙂 haha go ahead and try them!


Cranberry Greek Yogurt Granola Bars


  • 2 3/4 cups of rolled oats (I used old fashioned oats)
  • 3/4 cup almonds
  • 1 3/4 cups shredded coconut
  • 1 1/4 cups dried cranberries
  • 3/4 cup coconut oil ( used extra virgin, unrefined oil for the added health benefits)
  • 1/4 cup honey
  • 1/2 cup all natural nut butter (almond or peanut)


  • 5.3 ounce container plain greek yogurt
  • 1 tbls. gelatin
  • 1/2 tbls honey
  • sprinkling of shredded coconut

In a large mixing bowl, combine all ingredients except nut butter, coconut oil and honey. In a sauce pan, combine nut butter, coconut oil and honey together over medium heat.  Once melted and smooth, pour into bowl with other ingredients. Mix well. Line a cookie sheet or casserole dish with parchment paper.  Press bar mixture into pan, making sure to press down firmly in the corners.  Bars won’t stay together well if you don’t press them together well.

Put pan of bars in the fridge to set. Meanwhile, combine yogurt and honey in a small microwaveable dish and heat in microwave for 15 second intervals. Stir in between. Heat until mixture is warm, but not hot. If you heat too long, the yogurt will curdle. Add in gelatin and stir well. Spread yogurt mixture over  the bars, sprinkle with coconut if desired, and return to fridge.  Cool at least several hours for best results in removing them from the pan.

If you want to pack these granola bars for lunches, a snack at work, etc., I suggest wrapping them individually in a bit of plastic wrap.  They are very chewy and not as firm as some other recipes I’ve tried, so wrapping them keeps them from falling apart.  Otherwise, just store in the fridge in a sealed container.
