Cranberry Greek Yogurt Granola Bars

Hey friends! Hope you all are enjoying the beautiful spring weather-wherever you are! With summer coming on, I decided to do a bit of experimenting with recipes that I think are summery ­čÖé So…(drumroll)… I present, Cranberry Greek Yogurt Granola Bars! ┬áThese bars are really delicious. I mean, they feel like they could be a yummy desert, but all the ingredients are healthy! And did I mention they are no-bake?

These bars are chock full of protein and healthy fats, and I think they would be a great pick me up as mid-day snack.

You can change up the ingredients to your own tastes, but the combo of things I used turned out fantastic! If I do say so myself ­čÖé haha go ahead and try them!

Cranberry Greek Yogurt Granola Bars

Bars

  • 2 3/4 cups of rolled oats (I used old fashioned oats)
  • 3/4 cup almonds
  • 1 3/4 cups shredded coconut
  • 1 1/4 cups dried cranberries
  • 3/4 cup coconut oil ( used extra virgin, unrefined oil for the added health benefits)
  • 1/4 cup honey
  • 1/2 cup all natural nut butter (almond or peanut)

Topping

  • 5.3 ounce container plain greek yogurt
  • 1 tbls. gelatin
  • 1/2 tbls honey
  • sprinkling of shredded coconut

In a large mixing bowl, combine all ingredients except nut butter, coconut oil and honey. In a sauce pan, combine┬ánut butter, coconut oil and honey together over medium heat. ┬áOnce melted and smooth, pour into bowl with other ingredients. Mix well. Line a cookie sheet or casserole dish with parchment paper. ┬áPress bar mixture into pan, making sure to press down firmly in the corners. ┬áBars won’t stay together well if you don’t press them together well.

Put pan of bars in the fridge to set. Meanwhile, combine yogurt and honey in a small microwaveable dish and heat in microwave for 15 second intervals. Stir in between. Heat until mixture is warm, but not hot. If you heat too long, the yogurt will curdle. Add in gelatin and stir well. Spread yogurt mixture over  the bars, sprinkle with coconut if desired, and return to fridge.  Cool at least several hours for best results in removing them from the pan.

If you want to pack these granola bars for lunches, a snack at work, etc., I suggest wrapping them individually in a bit of plastic wrap. ┬áThey are very chewy and not as firm as some other recipes I’ve tried, so wrapping them keeps them from falling apart. ┬áOtherwise, just store in the fridge in a sealed container.

DIY: Terrariums in 30 minutes

Happy Monday! I hope that this week is a fun and profitable one for you! All my family is in town today for my sister’s graduation from nursing school. We are all pretty stinkin’ proud of her perseverance in going back to school.

So lately I have had quite the infatuation with plants and gardening. The only problem is that Joe and I live in an apartment…haha not a whole lot of room for a garden! Therefore I’ve had to curb my plant fettish with indoor plants, and plants that I can sit on our little deck. I’ve been wanting to try making a few terrariums for a while now, and the other day I gathered some supplies and made a few. I was surprised how easy and quick they were to make!

If you would like to make a few terrariums yourself, here is how I made mine.

Supplies:

  • Glass bowls, dishes, or terrarium planters- (You can get dishes at Goodwill, the dollar store, or at a craft store.)
  • Activated Charcoal (You won’t need this unless you have a lid on your dish. It prevents mold)
  • Succulent potting soil (Got mine at Wal-Mart)
  • Small pebbles/rocks (We collected some at a beach a while back)
  • Assorted succulent plants (Got mine at Wal-Mart!)
  • Colorful moss (Assortment bags are sold at ACMoore and Michaels)

Alright! Start out by adding some rocks/pebbles to the bottoms of your dishes. This helps the soil to drain so you can prevent root rot. Add a layer of activated charcoal next if you are using a closed container. I’m not, so I skipped it.

Now add the soil. If you are using small plants or pieces of plants, you will want to have about 2-3 inches of soil. Bigger plants will need a bit more.

Now for the plants! Make sure the soil in the pots the plants came in is moist, then carefully plant your succulents in your desired arrangements. I suggest going for variety, and working in mostly odd numbers.

Lastly, add your moss, some extra rocks for decoration, and anything else you like! I’m thinking about finding a small plastic dinosaur to add to one of mine ­čśŤ

I wound up having a few extra plants, so I found two other planters in my apt. They aren’t clear, but I still liked how they turned out.

To care for your terrariums, keep them in indirect sunlight, and spritz with water when the soil is dry. ┬áDo not over water these guys! It’s better to underwater than to overwater.
